Beans, Greens, and Broccoli

Prep Notes

Soak Raw Black Eyed Peas overnight in cold water and refrigerate, or for up to 6-8 hours (when ready to cook rinse and drain water from peas)

Rinse Swiss Chard in cold water

Rinse Broccolini in cold water

Chop Swiss Chard to desired size


1 bunch Swiss Chard (Green or Rainbow)

1 cup Raw Black Eyed Peas

1 bunch Broccolini

Extra Virgin Olive Oil

Sea Salt

Ground Black Pepper

1 Clove Garlic

2 Tbsp fresh parsley

1/4 tsp Hot Pepper Flakes

*Use Organic when possible, and always Extra Virgin Cold Pressed when using an Olive Oil


Bring water to a boil in medium pot then add Black Eyed Peas

Cook on medium high for 5 minutes, over pot with id half way

Then, lower heat and cook on medium low for up to 45-50 minutes (until soft)

Let cool for 5 minutes

Add Olive Oil to taste once, a pinch of salt, and black pepper

Coat medium sautéing pan with Extra Virgin Olive Oil (drizzle around pan)

Sauté Swiss Chard and Broccolini on Medium low

While cooking, add garlic, sea salt, ground pepper, red pepper flakes, and fresh parsley

Cook for up to 10 minutes until Broccolini is tender

Plate and Enjoy!
