1/4 c Raw Cacao Nibs
1 Tsp Ground Cinnamon
3 Tbsp Coconut Oil (Unrefined, Organic)
2 1/2 tsp Vanilla
1/4 tsp Pink Himalayan Salt
1/4 c Organic Coconut Sugar
1/2 tsp Baking Soda
1 1/2 c Coconut Flour
1 c Almond Meal
1 Flax Egg (Vegan substitute)
[1 Tbsp Ground Flax; 3 Tbsp Water]
1/4 c Whole Fat Coconut Milk
1 tsp Coconut Butter
*Use Raw Organic ingredients when possible
Preheat Oven to 350 degrees
Combine all dry ingredients in medium mixing bowl and whisk together.
Combine all wet ingredients in medium mixing bowl and whisk together.
Combine all ingredients in large mixing bowl and whisk together (stir until all ingredients are mixed well).
Scoop 1 tsp of cookie batter and place on baking sheet with parchment paper.
(Place about 1" apart)
Bake for 20 Minutes (everyone's oven cooks different, so check cookies at 10-15 minutes).
Look for slightly brown color on the outside or check with a toothpick to see the consistency.
Let cool for 10 minutes, then Enjoy!
