Olive and Carrot Salad

Prep Notes

Rinse all produce

Peel and Chop Carrot

Slice Olives in half

Slice Cucumber (peel if not Organic)


Pea Shoots

1/2 Cucumber

2 Tbsp Kalamata Olives

2 Tbsp Pine Nuts

2 tsp Chopped Mozzarella Cheese (Grassfed)

Spring Mix

1 White Carrot


Place Spring Mix on plate

Mix all ingredients in bowl and scoop onto plate

Drizzle EVOO and Fresh Squeezed Lemon Juice on top

Add Sea Salt and Black Pepper to taste
