Pumpkin Cake


1 can Organic Pumpkin

1 tbsp. Vanilla Extract

1 1/2 tsp Sea Salt

2 tbsp. Ground Cinnamon

2 cups Coconut Flour

1/4 cup Coconut Oil

1 tsp. Fresh Ginger, minced

2 tbsp. Maple Syrup

1/4 cup Cashew milk

3 Pasture-raised Organic Eggs

*Use Organic when possible


Preheat oven to 350 degrees

In a large mixing bowl combine eggs, maple syrup, vanilla extract, ginger, milk, pumpkin, and oil together (wet ingredients)

Combine all dry ingredients, cinnamon, flour, salt

Add dry ingredients into the large mixing bowl with the wet ingredients

Pour batter into a greased baking pan, (bread size baking pan; use coconut oil to lightly grease pan)

Bake for 45 minutes or until fully cooked inside (test with a toothpick at 30 minutes, then every 5 minutes)
