Pumpkin Blueberry Coconut Muffins

Prep Notes

Preheat oven to 350 degrees

Use muffin trays

Grease muffin trays  (use coconut oil to lightly coat the whole loaf pan)


1 Ripe Bananas

1/4 c Fresh Blueberries

1/4 c Raw Sunflower Seeds

1 c Pumpkin Puree

2 Tbsp Cinnamon

1/4 tsp Sea Salt

1/4 tsp Nutmeg

1 1/2 tsp Vanilla Extract

1 1/2 c Coconut Flour

2 Tbsp. Coconut Oil

2 eggs (choose organic and/or pasture raised)

Unsweetened Coconut Flakes

*Choose unrefined, organic ingredients when possible


Mash bananas and pour into large mixing bowl

Whip eggs and add to banana mixture

Add Pumpkin Puree

Add wet ingredients

(Add Fruit and Nuts last)

Add dry ingredients, adding flour last (add a little at a time, while mixing)

Pour batter into muffin pans

Bake at 350 degrees for  35 minutes, checking to see consistency

Then remove from the oven and top each muffin with a few Raw Sunflower Seeds and Unsweetened Coconut Flakes

Place muffins trays back into the oven for 15-20 minutes (use a toothpick to check if bread is finished; toothpick will come out clean)

CoolMuffins for up tp 10 minutes
