Roasted Eggplant

Rinse Eggplant

Rinse al Herbs


1 Large Eggplant

4 Fresh Basil Leaves

2 Tbsp Fresh Parsley

Sea Salt to taste

Ground Black Pepper to taste

Extra Virgin Olive Oil


Preheat oven to 350 degrees

Chop eggplant into cubes

Place eggplant into mixing bowl and add all ingredients

Drizzle EVVO

Stir ingredients together

Bake on a cookie sheet for 30-40 minutes, until soft
