Vegetarian Minestrone


Prep Notes

Rinse all Produce thoroughly


Ingredients

Lacinto Kale

Carrots

Chickpeas

1 Yellow Pepper

2 16oz Vegetable Broth

2 Tomatoes

1/2 Sweet Onion

2 Garlic Cloves, minced

2 Bay Leaves

1 Tbsp Tumeric

EVVO

Sea Salt to taste

Directions

Chop and Blend 2 Tomatoes (so they are pureed)

Chop onion fine

Dice Yellow Pepper

Add Onion, Garlic, Pepper, to deep stew pot and sauté for 5 minutes on medium low

Add  Vegetable Broth (make your own or buy store bought, select one with the list amount of ingredients, no MSG, added sugar, or gluten)

Add Tomato Puree

Add Carrots

Add cooked and rinsed chickpeas

Cook for 10 minutes on Medium heat, add Tumeric, Salt, Bay Leaves and Kale (chopped)

Cook covered for 45 minutes on low heat, stirring occasionally
