Veggie Burritos


Ingredients

Whole Grain Tortilla Wraps

1 Bag Matchstick Carrots (precut and washed)

2 Cups Quinoa (boiled and cooked until tender)

1 Yellow Bell Pepper (rinsed and sliced)

1 Orange Bell Pepper (rinsed and sliced)

1 Can Black Beans (rinsed thoroughly)

1 Large Zucchini (washed and finely chopped)

1/2 White Onion (diced)

Fresh Rosemary and Thyme

Fresh Parsley

EVOO

Coconut Oil (Virgin Unrefined)


Directions

Heat Large cooking pan on low heat, adding some Coconut Oil to heat the pan

Add chopped Onion, Herbs, Carrots and finely chopped zucchini, peppers, beans, and salt/pepper.

Sauté mixture for 15 minutes.

In a medium mixing bowl add cooked quinoa, with a bit of EVOO, fresh parsley, and salt/pepper.

Stir mixture.

Add Quinoa to the cooking pan with additional ingredients.  Cook on medium heat for 5-7 minutes.

Then, let mixture cool in a large bowl for 5-10 minutes.

Once cooled, scoop mixture into wraps, roll them up and Enjoy!
